Surfaces can only be coloured once.  if you want to show a gradient across the surface you will need to divide the surface into smaller facets or convert it to a mesh where you can colour the vertices. I recommend the mesh option but am unable to show you an example at the moment. Search this site there are plenty of previous ones

Surface > Util > Isotrim :D
