On the whole I don't see any real difference between the two except Shift Paths will do both Negative and Positive with differing results.
With a path structure like {A;B;C}
Trim Tree will go {A;B} and {A} with the inputs 1 and 2
But Shift Paths will do the Same with -1 and -2 but it will also shift the other way with positive inputs e.g.
{B;C} and {C} with 1 and 2 but the important difference here is that the paths are not combined.
Edit: Why you would want this I haven't worked out yet. Maybe a partial Simplify
