Fornes has spent many years perfecting this both in assembly and structural performance and as far as I know his methods are proprietary. What aspect of them are you interested in looking at? the shapes, the fabrication, the structural capacity?

For the shapes you can look at some growth algorithm loops on meshes like reaction diffusion using anemone to loop. 

For fabrication check out the ivy plugin which can make mesh strips for this kind of unrolling and part making. 

For structural load testing try something like karamba plugin.
