Multiple anchor points for graph mapper
I am trying to get uneven 2d domains on surfaces. Is there any way to add multiple anchor points to bezier curve graph for increasing control over uneven 2d domains

No.
You will need to generate a curve that you can use as a graph and evaluate it for mapping values from one domain to another.
If you search the forum for Custom Graph Mapper you should find some old posts along a similar line
