flatten surface help

Anyone? some direction would be great, i'm trying to create upholstery patterns from a 3d model, i extract the surface an unfold in rhino but doing 2 times with the same surface give me variations i dont know why.

Try kangaroo.
Only one thing to consider, by definitiion, double curvature sur face cant be flattened, not without aproximation/deviation.
The example video that you provide isn't rigorous at all...
Search the web for kangaroo...developable surfaces and so on
