Converting audio to text file

I know there are plenty of threads out there talking about this subject but I have yet to find one with some type of tutorial to show how this is done.  I've been looking at processing and vvvv both but have no idea how to convert this audio file into a text file.  I don't really have a whole lot of scripting background so I'm looking for some type of beginner method on doing this.  And suggestions?
