This technical paper by Philip is one the best explainations of NURBS curves around. The link to it on the OpenNURBS site has been broken for awhile. Philip was kind enough to point out a working link. Here it is:

Rhino used nurbs 2D & 3D ?
Hi rhymone,
the core implementation of nurbs curves in Rhino is N-Dimensional. However we typically only use 2D and 3D curves. 2D curves are used almost exclusively for trimming curves as surface edges.
